Served last night as an hors d'oeuvres with cocktails before dinner. Just plain with a small dollop of cream cheese. The flavor is delicate and the color is light pink with a slight smoky taste. Just perfect! Especially knowing that the fish was raised on land in a closed containment with recirculating water. These are in no way harmful to wild fish and they are raised without hormones or antibiotics or pesticides!
